Ingredients

Ricotta Cheese Spread

250mL1 cup ricotta cheese

11 clove garlic, minced

30mL2 tbsp Bick’s® Hot Pepper Rings, finely chopped

Salt to taste

Bick’s Hot Pepper Rings for garnish, optional

Prosciutto Wrapped Gherkins

80g3 oz thinly sliced prosciutto

1212 Bick’s Sweet Gherkins

Pate Topped Flatbreads

88 prepared flatbreads (13g/½oz each)

75mL1/3 cup prepared paté

1010 Bick’s Sweet Gherkins, sliced

Beets with Goat Cheese Crumble

250mL1 cup Bick’s Sliced Beets, drained

30mL2 tbsp crumbled goat cheese

15mL1 tbsp toasted walnuts, chopped

15mL1 tbsp dried cranberries

Directions

  Ricotta Cheese Spread

Makes: about 1 cup (250mL)

 1 Combine all ingredients in small bowl. Serve.

 2 Remove gherkins from brine and dry. Wrap with 1 slice of prosciutto and place on serving platter.

 3 Spread flatbreads with paté and top with sliced gherkins. Serve immediately.

  Beets with Goat Cheese Crumble

  Preparation Time: 2 minutes

Makes: 4 servings

 4 Place beets on serving platter and top with remaining ingredients.Top beets with crumbled goat cheese, toasted walnuts and dried cranberries, and garnish with cocktail onions.
