Baked Sun-Dried Tomato Cheese Spread

Ingredients

125 mL½ cup Bick’s® Sweet Corn Relish

50 mL¼ cup Bick’s® Mini-Crunch’ems® Garlic Rush Pickles

125 mL½ cup sun-dried tomatoes

8oz/250g1 pkg cream cheese, softened

2 eggs

75 mL1/3 cup feta cheese

50 mL¼ cup green onion, chopped

50 mL¼ cup black olives, chopped

Assorted crackers or bread (for serving)

Directions

 1 Preheat oven to 325°F (160°C). Grease 1.5 L (1.5 QT) casserole dish.

 2 Soak tomatoes in boiling water for 10 minutes. Drain and chop. Beat cream cheese, eggs, and feta cheese on medium speed of electric mixer for 2 minutes or until smooth. Fold in tomatoes and remaining ingredients. Mix well.

 3 Spread evenly in prepared dish. Bake for 45-55 minutes, or just until set around edge and slightly soft in centre. Serve warm with sliced bread or crackers.

Bake spread in two mini loaf pans 15x8x5cm (6”x3”x2”)
