Mediterranean Pasta Salad

Salad:
½ lb (250g)  penne pasta
1 ½ cups (375mL)  Bick’s® Garlic Dill Pickles
1 red pepper, cut in julienne strips
1 green pepper, cut in julienne strips
½ cup (125mL)  feta cheese, crumbled
½ cup (125mL)  mozzarella cheese, cubed
½ cup (125mL)  parsley or cilantro, coarsely chopped
½ cup (125mL)  green onion, chopped
Vinaigrette:
1/3 cup (75mL)  olive oil
1/3 cup (75mL)  pickle juice (from the pickle jar)
1 large clove of garlic
1 tbsp (15mL)  dried basil leaves
1 tsp (5mL)  salt
¼ tsp (1mL)  dried oregano leaves
1. Cook pasta until al dente; rinse and drain well. Transfer to large salad bowl and mix with remaining salad ingredients; toss lightly.

2. Combine all ingredients for vinaigrette. Mix well. Pour over salad and toss. Taste and adjust seasoning, if necessary. Cover and chill at least 2 hours up to 24 hours until serving.

Preparation Time: 20 minutes
Cooking Time: 10 minutes

Makes: 8 servings
